Sustainable food and food waste

An effort to combat food waste is in the top three of the most cost-effective climate measures you can implement. And there is plenty to address, as up to a third of all food produced in the world is wasted. In Denmark and the rest of the Western world, a large amount of waste occurs at the consumer level, but efforts should be taken throughout the value chain. At NORION, we work extensively with food waste at all stages of the value chain and across many different actors. Our approach to the challenges is that they need to be solved through cross-cutting efforts that highlight structural and legislative inadequacies in the system, examine the behaviour of users in the value chain and create new collaborations and solutions.

What can we do?

NORION provides specialised knowledge and history on the subject of food waste and food waste, and we can develop and adapt methods both for specific food waste measurements and for mapping the extent of the problem or the effects of initiatives. NORION provides qualified advice on how you, as a company, organisation or public authority, can move forward in your efforts to stop food waste. Over the past 10 years, NORION has built up a large network of players in the food value chain, and we like to bring new players with exciting solutions together with established players to strengthen the fight against food waste and food loss.

What have we done?

Over the past 10 years, NORION's specialists have

    • Mapped the extent of food waste in Denmark and the Nordic countries through the Waste Data System, practice measurements, data analyses and interviews (Projects for the Danish EPA, the Ministry of Environment and Food and the Nordic Council of Ministers) 

    • Supported the development of voluntary agreements for food waste reduction (Projects for OneThird and WRAP)
       

    • Investigated how legislation and purchasing agreements can lead to food waste in wholesale and retail (projects for Copenhagen and Aarhus Municipality)
       

    • Conducted behavioural surveys and food waste measurements in professional kitchens (HORESTA, Global Compact & REGA)
       

    • Made CO2 calculations for reduction potentials (Sustainable Bottom Line for Marie Kruse School's Canteen and Sølyst)
       

    • Facilitated the Partnership on Less Food Waste and coordinated a cross-cutting recommendation on tax and regulatory barriers for donation (Danish Environmental Protection Agency)
       

    • Mapped the potential for using Class II vegetables in primary production (GRIM)
       

    • Tested sourcing and use of Class II vegetables in professional kitchens (GRIM, Compass Group and REGA)
       

    • Developed models to ensure improved efforts against food waste in Denmark and the Nordic countries through reduction and increased redistribution of surplus food (Stop Wasting Food, Sølyst, Marie Kruse School, Nordic Council of Ministers)
       

    • Established business partnerships and secured funding for the operation of the Stop Wasting Food organisation (Tuborgfondet and Stop Wasting Food)
       

    • Developed projects including a knowledge centre on food waste and communication campaigns with the food value chain focusing on promoting respect for food (L&F, REMA 1000, Stop Spild Af Mad, De Samvirkende Købmænd)
       

    • Developed mapping methods, definitions and delimitations for food waste (Ministry of Environment & Food)
